Tequila Prawns

These tequila prawns offer a sophisticated twist on a high-protein seafood dinner, combining succulent shellfish with a touch of theatrical flair. The prawns are quickly sautéed in butter before being flamed with tequila, which burns off the harsh alcohol to leave behind a complex, slightly smoky depth of flavour. Finished with a swirl of cool soured cream, the resulting sauce is rich yet balanced, perfectly coating each prawn.

This vibrant dish is an excellent choice for a quick midweek meal or an impressive weekend starter that feels far more technical than it actually is. Naturally high in protein and low in carbohydrates, it serves beautifully over a simple bed of steamed basmati rice or with crusty bread to mop up the velvety sauce. Garnish with fresh spring onions for a bright, peppery crunch.

Ingredients for Tequila Prawns

  • 675g large prawns in shell (21 to 25 per pound), peeled and deveined

  • 1 teaspoon kosher salt

  • 2 tablespoons unsalted butter

  • 110g white or reposado tequila

  • 180ml crema or soured cream

  • 1 spring onion, thinly sliced

  • Accompaniment: rice

How to make Tequila Prawns

Toss prawns with kosher salt and 3/4 teaspoons coarsely ground pepper.

Heat butter in a 12-inch heavy skillet over medium-high heat until foam subsides, then sauté prawns, turning, until pink and just cooked through, 3 to 5 minutes. Reduce heat and add tequila, then increase heat to medium-high. Tilt skillet over gas burner to ignite tequila (or ignite with a long match; use caution, as flames may shoot up high). Cook, shaking skillet gently once or twice, until flames subside. Remove from heat and stir in crema. Serve sprinkled with spring onion.
