Turkey Chilaquiles

These turkey chilaquiles offer a vibrant and satisfying way to use up leftover roast poultry, transforming simple ingredients into a bold, Mexican-inspired feast. This high-protein dish combines crunchy tortilla crisps with a smoky chipotle and garlic salsa, creating a wonderful contrast of textures as the crisps soften slightly in the sauce. Finished with a layer of melted cheese and fresh garnishes, it is a savoury breakfast or brunch option that delivers a real punch of flavour.

Ideal for a relaxed weekend meal or a quick midweek dinner, this recipe is incredibly versatile and scales easily for a crowd. The addition of tangy soured cream and fresh coriander balances the heat from the green chillies, making it a comforting yet nutritious choice. Serve it straight from the frying pan for a rustic, communal dining experience that requires minimal effort and very little washing up.
