Cherry Tomato and Lemon Salad

This vibrant cherry tomato and lemon salad is a bright and refreshing side dish that celebrates simple, seasonal ingredients. By macerating fresh lemon segments with a touch of sugar, you create a zesty base that perfectly balances the sweetness of ripe cherry tomatoes and the savoury notes of fresh chives. It is an excellent choice for those seeking a light, low-sugar addition to their meal that does not compromise on bold, citrusy flavour.

Ideal for summer alfresco dining or as a sharp accompaniment to grilled fish and roasted chicken, this versatile salad is incredibly quick to assemble. The short resting time allows the juices to mingle, creating a natural dressing that feels elegant yet effortless. Serve it at room temperature to ensure the delicate aromas of the extra-virgin olive oil and herbs are at their most fragrant.

Ingredients for Cherry Tomato and Lemon Salad

  • 2 large lemons

  • 1 tablespoon sugar

  • 450g cherry or grape tomatoes (725ml ), halved or, if large, quartered

  • 45ml chopped fresh chives

  • 2 teaspoons extra-virgin olive oil

  • 1/2 teaspoons salt

  • 1/4 teaspoons black pepper

How to make Cherry Tomato and Lemon Salad

Finely grate enough zest from 1 lemon to measure 2 teaspoons . Trim ends of both lemons, then stand lemons on a cut side and cut peel, including all white pith, from lemons with a sharp paring knife (discard peel). Cut segments free from membranes, then cut segments crosswise into 1/4-inch pieces. Toss lemon segments gently with sugar in a bowl.

Stir in remaining ingredients and zest, then let stand, covered, at room temperature 15 minutes (to allow flavours to develop).
