Everyday Greens Salad

This everyday greens salad is a celebration of simple, high-quality ingredients. By using a vibrant blend of tender leaves and fresh herbs, this vegan-friendly dish provides a crisp and refreshing accompaniment to almost any main course. The secret lies in the homemade vinaigrette, which balances the tang of cider vinegar with the subtle heat of Dijon mustard and a touch of sweetness to perfectly coat every leaf.

As a versatile side dish, this recipe is ideal for quick weekday lunches or relaxed weekend dinners. The dressing can be prepared well in advance and kept in the fridge, making it an excellent time-saver for busy households. For the best results, toss the salad just before serving to ensure the greens remain bright, crunchy, and full of seasonal flavour.

Ingredients for Everyday Greens Salad

  • 350ml extra-virgin olive oil

  • 180ml any combination red wine vinegar, white wine vinegar, and/or apple cider vinegar

  • 1 tablespoon Dijon mustard

  • 1 tablespoon vegan honey

  • Kosher salt

  • 230g mixed tender greens

  • 1 cup torn tender herbs (optional)

  • Kosher salt

Combine oil, vinegars, mustard, and honey in a large resealable jar or airtight container; cover and shake vigorously until emulsified, about 30 seconds. Season with salt.

Do Ahead: Vinaigrette can be made 1 month ahead. Cover and chill. Shake to re-emulsify.

Drizzle 45ml vinaigrette into a large bowl, coating sides and bottom of bowl. Add greens and herbs (if using). Using your hands, fold greens, working from the bottom, out and up the sides of the bowl, until evenly coated in vinaigrette. Season with salt until greens taste vibrant (you may need to season and toss a few times). Mound salad, higher than wide, on plates or in shallow bowls.
