Baby Aubergine, Olive, and Herb-Cheese Frittata

This baby aubergine, olive, and herb-cheese frittata offers a sophisticated twist on a classic egg dish. By pan-frying delicate baby aubergines until tender before adding the egg base, you create a beautiful, patterned finish that is as impressive as it is delicious. The combination of briny green olives and fragrant basil provides a Mediterranean flair that perfectly complements the rich, creamy pockets of garlic and herb cheese.

As a versatile vegetarian main, this dish is ideal for a relaxed weekend brunch or a quick, nutritious midweek supper paired with a crisp leaf salad. The use of shop-bought Boursin or a similar herbed cheese adds an instant depth of flavour, making this a reliable recipe for those seeking a high-protein, gluten-free meal that doesn't skimp on satisfaction.

Whisk eggs, olives, basil, and salt in bowl. Sprinkle with pepper. Coarsely crumble half of cheese into eggs; stir to blend. Pour over aubergines, rearranging evenly in pan.
