This vibrant Brussels sprout hash with caramelised shallots is a sophisticated way to enjoy a classic seasonal vegetable. By finely slicing the sprouts and sautéing them over a high heat, you achieve a delicate texture and a nutty, charred flavour that perfectly complements the sweetness of the glazed shallots. It is a fantastic alternative to traditional boiled sprouts, offering a fresh and savoury profile that even the most sceptical diners will appreciate.
As a versatile vegetarian side dish, this recipe fits seamlessly into a Sunday roast or a festive Christmas spread. The combination of apple cider vinegar and sugar creates a light agrodolce effect, cutting through the richness of the butter. For a more substantial meal, try serving it topped with a poached egg or alongside crispy roast potatoes and seasonal greens.
