These roasted potato wedges are a fantastic addition to any vegetarian spread, offering a satisfying crunch and a punch of earthy spice. By preheating the baking tray, you ensure the potatoes develop a golden, crisp exterior while remaining fluffy in the centre. The simple seasoning of ground cumin and dried oregano brings a subtle warmth that perfectly complements the natural sweetness of the baking potatoes.
To balance the savoury notes, we have paired these wedges with a bright coriander-lime mayonnaise. The addition of soured cream gives the dip a pleasant tang and a lighter texture than a traditional mayo. Whether you are serving these as an easy side dish for a mid-week meal or as a crowd-pleasing snack, this homemade version is far superior to any shop-bought alternative.
