This chilled tomato and watermelon soup is a vibrant, modern take on a classic Spanish gazpacho. Combining the natural sweetness of ripe fruit with the savoury depth of tomatoes and shallots, it offers a sophisticated balance of flavours that is both refreshing and unexpected. The addition of ground almonds provides a subtle creaminess and body, making it an elegant choice for a seasonal lunch or a light dinner party starter.
As a nutritious vegetarian dish, this soup is particularly well-suited for warm summer afternoons when you want something cooling yet satisfying. The salty hit of crumbled feta and pitted olives provides a wonderful contrast to the base, while fresh mint leaves add a fragrant finish. Best served thoroughly chilled, it is a simple, healthy way to celebrate the best of summer produce.
