Garlic-Roasted Chicken Breasts

This garlic-roasted chicken breasts recipe is a masterclass in extracting maximum flavour from a handful of Mediterranean pantry staples. By stuffing a fragrant paste of garlic, oregano, and crushed chillies directly into the meat, the chicken remains incredibly moist while the skin crisps beautifully at a high temperature. It is a vibrant, aromatic dish that brings a touch of rustic warmth to the dinner table without requiring hours of preparation.

As a diabetes-friendly option, this protein-rich main is naturally low in carbohydrates and focuses on heart-healthy fats from extra-virgin olive oil. The bone-in preparation ensures the meat stays tender and succulent during the fast roasting process. Serve it alongside a crisp green salad or steamed seasonal vegetables for a light, nutritious dinner that the whole family will enjoy.
