This restorative beef broth is a deeply nourishing staple that focuses on rich, natural flavours and wholesome ingredients. By slowly simmering bone-in short ribs with aromatic garlic and sweet prunes, you create a complex, savoury liquid that feels both indulgent and cleansing. The addition of prunes provides a subtle depth of colour and a hint of sweetness without the need for refined sugars, making it an excellent base for various soups or a comforting drink on its own.
As a diabetes-friendly recipe, this broth is naturally low in carbohydrates and high in protein, offering a satisfying option for those managing their blood sugar levels. It is an ideal make-ahead component for busy weekdays, as it keeps well in the fridge and actually improves in flavour after a day or two. Serve a warm mugful as a light lunch or use it to poach seasonal vegetables for a heartier meal.

Ingredients for Restorative Beef Broth
1.8kg bone-in beef short ribs (about 15 individual ribs)
1 medium onion, halved
80g pitted prunes (about 90g )
3 garlic cloves, lightly crushed
Kosher salt
How to make Restorative Beef Broth
Combine short ribs, onion, prunes, and garlic in a very large heavy pot; add 5.7L water (preferably filtered or spring water). If unable to add all water at once, pour in remaining liquid later as broth reduces. Bring to a boil over medium-high heat, skimming any foam from the surface. Cover with lid slightly ajar. Reduce heat to low and simmer very gently, occasionally skimming the surface, until meat is tender, about 2 1/2 hours. Uncover; simmer until broth is intensely flavoured, about 3 hours longer.
Place a fine-mesh sieve over another large pot; line with a layer of cheesecloth and strain broth (you should have about 1925ml ). Remove beef from bones in strainer and reserve for another use; discard remaining solids in strainer. Spoon fat from surface of broth. Season to taste with salt. DO AHEAD: Can be made 3 days ahead. Cover and chill. Rewarm before serving.
