Roasted Cod with Shiitakes in Miso Broth

This roasted cod with shiitakes in miso broth is a sophisticated yet simple seafood dish that highlights clean flavours. By roasting the white fish and mushrooms at a high temperature, the cod remains succulent while the shiitakes develop an earthy, concentrated depth that perfectly complements the savoury notes of the red miso. It is a wonderful way to enjoy fresh hake or cod, offering a delicate balance of textures between the flaky fillet and the crisped mushroom caps.

As a diabetes-friendly option, this recipe is naturally low in carbohydrates and high in lean protein, making it an excellent choice for a nutritious midweek supper. The use of shop-bought miso sachets keeps the preparation time minimal without compromising on the authentic umami flavour. Serve this light meal in warmed bowls to keep the broth at its best.
