Tony's Steak

This citrus and soy marinated flank steak is a vibrant, savoury dish that brings plenty of zing to the table. By using a clever blend of lime juice, toasted sesame oil, and fresh spring onions, the beef is infused with a deep umami flavour that perfectly complements the charred finish from the grill. It is a wonderful choice for those looking for a high-protein, satisfying meal that feels indulgent yet remains balanced.

As a diabetes-friendly main course, this recipe focuses on lean protein and minimal added sugar to keep the nutritional profile in check. The long marinating time ensures the meat is tender and succulent, making it ideal for a weekend barbecue or a midweek family dinner. Serve the thinly sliced steak alongside a crisp green salad or some steamed seasonal greens for a complete, wholesome meal.

Ingredients for Tony's Steak

  • 6 spring onions, thinly sliced (white and pale-green parts only)

  • 1 garlic clove, chopped

  • 80ml soy sauce

  • 2 tablespoons fresh lime juice

  • 1 tablespoon olive oil

  • 1 tablespoon (packed) light brown sugar

  • 1 teaspoon hot pepper sauce

  • 1 teaspoon toasted sesame oil

  • 450g flank steak

  • Kosher salt

How to make Tony's Steak

Combine spring onions and next 7 ingredients in a large resealable plastic bag and mix well. Add steak; seal bag, pressing out excess air. Turn steak to coat. Refrigerate overnight, turning bag occasionally.

Build a medium-hot fire in a charcoal grill, or heat a gas grill to high. Remove steak from bag; wipe off excess marinade. Season both sides lightly with salt. Grill steak until well browned, about 6 minutes per side for medium-rare. Transfer to a cutting board and let rest for 10 minutes. Slice thinly against the grain.
