This creamy almond aioli is a versatile, heart-healthy alternative to traditional egg-based mayonnaise. By blending protein-rich slivered almonds with high-quality olive oil, you create a velvety emulsion that is naturally dairy-free and vegan. The neutral, nutty flavour provides a sophisticated base that complements everything from roasted Mediterranean vegetables to grilled fish, making it a staple for those seeking a nutritious diet without compromising on texture.
As a quick, homemade condiment, this dip is perfect for batch cooking. It stays fresh in the fridge for several days and can be easily adjusted with a splash of water if you prefer a pourable dressing. High in monounsaturated fats and essential minerals, it is an excellent choice for a heart-healthy lifestyle. Serve it as a dip for crunchy raw crudités or as a satisfying spread in a wholegrain wrap.
