This elegant halibut pot pie offers a fresh take on a classic British comfort food. By using a light vegetable stock base enriched with sautéed fennel and shallots, the delicate flavour of the white fish is perfectly preserved rather than being masked by a heavy cream sauce. It is a sophisticated, savoury dish that provides a satisfyingly crisp topping without the need for traditional pastry.
As a high-protein meal, this recipe is ideal for those seeking a nutritious and filling dinner that does not compromise on taste. The addition of baby spinach provides a vibrant boost of greens, making it a well-balanced plate that works beautifully on its own. Serve this golden-topped fish pie piping hot for a wholesome midweek treat that the whole family will enjoy.
