Fattoush

This vibrant Fattoush is a quintessential Levantine bread salad that celebrates the bright, fresh flavours of a Mediterranean summer. Unlike a standard green salad, this recipe features crisp toasted pitta bread which acts as a vehicle for a zesty, citrus-forward dressing enriched with sumac and pomegranate molasses. It is a wonderful example of how simple, high-quality ingredients like ripe tomatoes and crunchy cucumbers can be elevated into something truly special with the right herb balance.

As a versatile vegan dish, this salad is perfect for a light lunch or as a refreshing side to grilled mains. The combination of flat-leaf parsley and fresh mint provides a cooling herbal note that cuts through the rich olive oil dressing. For the most authentic results, serve the salad immediately after adding the pitta to ensure the bread retains its signature crunch alongside the juicy vegetables.
