Pickled Corn

This vibrant pickled corn recipe is a fantastic way to preserve the natural sweetness of the season. Infused with zesty lime juice, punchy jalapeño, and aromatic coriander, these pickles offer a bright, acidic crunch that elevates almost any savoury dish. The combination of heat from the dried chillies and the sharpness of the white wine vinegar creates a sophisticated flavour profile that is far superior to shop-bought alternatives.

As a versatile vegan condiment, this pickle is an excellent addition to a weekend spread or a summer barbecue. It works beautifully scattered over black bean tacos, stirred into grain salads, or even served alongside grilled meats and fish. Making your own preserves at home is surprisingly simple, and this colourful jar makes a thoughtful homemade gift for food-loving friends.
