Snap Pea Salad

This vibrant sugar snap pea salad is a celebration of seasonal greens, offering a refreshing crunch that makes it an ideal accompaniment to summer dining. By using a mix of whole, sliced, and butterflied pea pods, you create a beautiful variety of textures that allows the zingy lemon dressing to coat every surface. The addition of fresh mint provides a cooling top note that cuts through the peppery bite of the rocket leaves.

As a naturally vegan dish, this salad is as nutritious as it is striking, packed with vitamins and bright, clean flavours. It works perfectly as a light lunch on its own or served alongside grilled mains at a garden barbecue. For the best results, assemble the salad just before serving to ensure the peas remain crisp and the delicate leaves stay perfectly fresh.

Ingredients for Snap Pea Salad

  • 450g sugar snap peas, trimmed and strings removed (see note)

  • A five-finger pinch of mint leaves (preferably black mint), roughly chopped at the last minute

  • 60ml Simple Lemon Dressing

  • Maldon or another flaky sea salt

  • Lemon juice

  • Large handful delicate, peppery rocket

How to make Snap Pea Salad

So long as you find the right snap peas, you'll have a smashing salad. But I find that putting your knife to them adds even more excitement, a little textural variation and attractiveness. Accordingly, run the tip of your knife along the spine of some of the larger pods, open them like a book to expose the peas, and gently pull to separate the two sides of the pod. Slice others diagonally in half or thirds. Keep small ones whole.

Combine the peas and mint in a large bowl. Pour in the dressing and toss gently but well. Season to taste with more salt and lemon, if you'd like. Add the rocket to the bowl and toss gently to coat the leaves in the dressing without bruising them. Arrange it all prettily on a platter and serve straightaway.
