Spicy Glazed Aubergine

This spicy glazed aubergine is a vibrant vegan dish that celebrates the smoky, versatile nature of the vegetable. By using long, slender aubergines and a traditional Japanese-inspired glaze, the flesh becomes incredibly tender while remaining beautifully caramelised on the outside. The combination of salty soy sauce, sweet mirin, and a hint of warmth from the ginger and seven-spice powder creates a complex flavour profile that works perfectly as a light lunch or a sophisticated side.

Ideal for those seeking a plant-based addition to a mid-week meal, this recipe focuses on simple preparation to maximise texture. Rinsing and drying the aubergine ensures it absorbs just enough oil to brown without becoming greasy. Serve it alongside steamed jasmine rice or as part of a larger spread to enjoy a healthy, homemade dish that is as beautiful to look at as it is to eat.

Ingredients for Spicy Glazed Aubergine

  • 575g Asian aubergines (about 4), trimmed, halved lengthwise, and cut diagonally into 1 1/2-inch pieces

  • 2 tablespoons mirin (Japanese sweet rice wine)

  • 2 tablespoons soy sauce

  • 1/2 teaspoons finely grated peeled ginger (use a Microplane)

  • 1/8 teaspoons Japanese seven-spice powder (sometimes labeled "shichimi togarashi"), or to taste

  • 45ml vegetable oil

  • 1 tablespoon finely chopped chives

How to make Spicy Glazed Aubergine

Toss aubergine with 1 teaspoon salt and drain in a colander, stirring occasionally, 45 minutes.

Rinse aubergine under cold water and dry well, pressing out any excess moisture.

Stir together mirin, soy sauce, ginger, and seven-spice powder.

Heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers, then sauté aubergine until browned, about 8 minutes. Stir in mirin mixture and cook, gently stirring and turning frequently, until sauce becomes a glaze and aubergine is browned and tender, about 1 minute.

Serve hot or at room temperature, sprinkled with chives.
