Creamed Corn

This classic creamed corn is a vibrant vegetarian side dish that celebrates the natural sweetness of fresh summer maize. Unlike many shop-bought or tinned varieties, this homemade version uses the 'milk' scraped directly from the cobs to create a deep, authentic depth of flavour. The combination of tender kernels, rich double cream, and a hint of butter results in a velvety texture that perfectly complements roast chicken, grilled meats, or a festive Sunday lunch.

Simmering the corn from scratch ensures a superior crunch and freshness, while the addition of fresh chives provides a subtle, savoury lift to balance the richness. It is a comforting, heart-healthy addition to any family meal and can be prepared in under twenty minutes. Serve it warm in a decorative bowl for a versatile accompaniment that is sure to become a seasonal favourite.

Ingredients for Creamed Corn

  • 12 ears corn, shucked

  • 475ml water

  • 2 tablespoons unsalted butter

  • 240ml double cream

  • 2 teaspoons plain flour

  • 2 tablespoons chopped fresh chives

How to make Creamed Corn

Cut corn from cobs (reserve cobs) and put in a large saucepan with water, butter, 1 teaspoon salt, and 1/2 teaspoons pepper. Simmer over medium heat, uncovered, stirring occasionally, until tender, 5 to 7 minutes.

Meanwhile, scrape cobs in a small saucepan to extract "milk." Whisk in cream and flour. Boil over medium heat, whisking constantly, 1 minute. Carefully transfer cream mixture and 475ml corn with some of cooking liquid to a blender and purée (use caution when blending hot liquids). Stir purée into corn and simmer 5 minutes. Stir in chives; season with salt and pepper.
