Japanese Turnips with Miso

This elegant vegetarian side dish celebrates the delicate flavour of Japanese turnips, often known as Tokyo or Hakurei turnips. Unlike standard varieties, these small, white roots have a mild, peppery sweetness that softens beautifully when braised. By using both the bulb and the nutritious greens, this recipe creates a vibrant, zero-waste dish that balances the earthy tones of the vegetables with a rich, savoury glaze.

Simmering the turnips in a mixture of mirin and water ensures they become perfectly tender while retaining their shape. The final addition of miso-infused butter adds a luxurious depth and a salty, umami finish. Serve these glazed turnips alongside steamed rice or roasted proteins for a healthy, sophisticated accompaniment that brings a taste of Japanese home cooking to your table.

Ingredients for Japanese Turnips with Miso

  • 3 tablespoons white miso

  • 3 tablespoons unsalted butter, softened, divided

  • 1.4kg small (1 1/2-to 2-inch) Japanese turnips with greens

  • 1 1/3 cups water

  • 2 tablespoons mirin (Japanese sweet rice wine)

How to make Japanese Turnips with Miso

Stir together miso and 2 tablespoons butter.

Discard turnip stems and coarsely chop leaves. Halve turnips (leave whole if tiny) and put in a 12-inch heavy skillet along with water, mirin, remaining tablespoon butter, and 1/8 teaspoons salt. Bring to a boil over medium-high heat, then boil, covered, 10 minutes.

Add greens by handfuls, turning and stirring with tongs and adding more as volume in skillet reduces. Cover and cook 1 minute. Uncover and continue boiling, stirring occasionally, until turnips are tender and liquid is reduced to a glaze, about 5 minutes. Stir in miso butter and cook 1 minute.
