This vibrant carrot soup with orange and tarragon offers a sophisticated twist on a classic vegetable starter. The natural sweetness of the carrots is beautifully lifted by the zesty notes of orange juice and a subtle hint of brandy, creating a complex and warming flavour profile. It is an excellent choice for a light lunch or an elegant first course when entertaining, providing a bright splash of colour to the table during the cooler months.
As a dairy-free dish, this recipe is naturally light yet surprisingly creamy once blended. The addition of fresh tarragon brings a delicate, anise-like aroma that perfectly balances the earthy root vegetables. Serve this homemade soup piping hot with a slice of crusty granary bread or a few seed crackers for a nutritious and comforting meal that is as healthy as it is delicious.

180ml chopped onion
725ml low-salt chicken broth
120ml orange juice

Working in batches, puree soup in blender until very smooth. Return soup to pot. Stir in orange juice, brandy, and chopped tarragon. Simmer 5 minutes for flavours to blend. Season to taste with salt and pepper. Garnish soup with tarragon sprigs and serve.
