This elegant celery and pear bisque offers a sophisticated twist on a classic vegetable soup, blending the peppery notes of fresh celery with the delicate sweetness of ripe Bartlett pears. As a dairy-free option, it relies on the natural starches of the fruit and a light flour roux to achieve a silky, decadent texture without the need for heavy cream. The addition of dark leek tops and fresh thyme provides an earthy depth that perfectly balances the bright, fruity garnish.
Ideal as a refined starter for a dinner party or a comforting light lunch, this savoury-sweet dish is as versatile as it is nutritious. The combination of seasonal produce makes it a vibrant choice for autumn dining, especially when served with crusty bread. For a truly professional finish, ensure the soup is blended thoroughly to maintain that signature velvety bisque consistency.

Remove bay leaves from soup. Puree soup in batches in blender until smooth. Return puree to same pot. Season to taste with salt and pepper. Thin with more broth by 60ml fuls, if desired. Rewarm briefly.
Divide soup among bowls; garnish with 1/2 cup finely diced pear and celery leaves.
