This creamy celeriac soup is a wonderful way to celebrate the subtle, nutty flavour of this seasonal root vegetable. Often overlooked, celeriac provides a naturally velvety texture when blended, removing the need for heavy cream or dairy. The addition of sautéed leeks adds a delicate sweetness that balances the earthy notes of the celeriac, creating a sophisticated yet comforting bowl of soup.
As a naturally dairy-free and gluten-free dish, it serves as a healthy and versatile option for a midweek lunch or an elegant dinner party starter. You can easily make this recipe suitable for vegans by using olive oil and vegetable stock. Try serving it with a swirl of extra virgin olive oil and some crusty bread for a satisfying, nutrient-rich meal.
