Corned Beef and Carrots with Marmalade-Whiskey Glaze

This glazed corned beef with marmalade and whiskey offers a sophisticated twist on a classic comfort food favourite. By using a pre-cooked joint, this dairy-free main course becomes a stress-free option for a weekend lunch or a celebratory St Patrick's Day dinner. The sweetness of the orange marmalade pairs beautifully with the subtle heat of the Irish whiskey and nutmeg, creating a thick, glossy glaze that caramelises perfectly in the oven.

Roasted alongside the beef, the carrots absorb the savoury juices and sweet glaze, making them a standout side dish. This simple traybake method ensures easy clean-up while delivering impressive depth of flavour. Serve the sliced beef on a warm platter with a generous garnish of fresh parsley and an extra dollop of sharp Dijon mustard to balance the rich, sweet notes of the meat.
