Country Ham with Redeye Gravy

This classic country ham with redeye gravy is a traditional farmhouse favourite that delivers a sophisticated balance of salty, sweet, and bitter flavours. The dish centres on thick-cut, salt-cured ham, which provides a robust base for the unique sauce made from the pan drippings and strong black coffee. By deglazing the frying pan with coffee and a touch of sugar, you create a thin, savoury gravy that is famous for its deep mahogany colour and intense depth.

Traditionally served as a hearty breakfast or brunch, this protein-rich dish is often paired with fluffy biscuits or creamy grits to soak up the delicious juices. It is an excellent choice for those seeking a quick yet flavourful meal, as the entire process takes less than fifteen minutes from pan to plate. For a lighter touch, serve it alongside grilled tomatoes or a simple green salad.

Ingredients for Country Ham with Redeye Gravy

  • 170g country ham, sliced 1/4-inch thick

  • 1 tablespoon unsalted butter, plus more for ham if necessary

  • 120ml strong black coffee

  • 120ml low-sodium chicken broth or water

  • 1/2 teaspoons sugar

How to make Country Ham with Redeye Gravy

Heat a large skillet (preferably cast-iron) over medium-high. Cook ham, adding 1/2 tablespoons butter if ham is lean to help the browning process, until browned and fat has rendered, 2–3 minutes per side. Transfer ham to a platter.

Pour coffee into the same skillet and cook over medium-high heat, scraping skillet with a wooden spoon to deglaze and loosen any browned bits. Add broth and sugar; simmer, stirring occasionally, until thickened and reduced to about 60g , 3–4 minutes. Add 1 tablespoon butter and whisk until emulsified, about 1 minute more. Pour gravy into a small bowl or serving vessel and serve drizzled over or alongside ham.
