Creamy Courgette-Basil Soup

This vibrant courgette and basil soup is a wonderful way to celebrate fresh, seasonal produce while maintaining a focus on digestive health. By using a nourishing gut-healing bone broth as the base, the recipe achieves a deep, savoury flavour that perfectly complements the mild sweetness of the sautéed courgettes. The addition of fresh basil leaves provides a fragrant, peppery lift, making this a bright and revitalising option for any time of year.

As a dairy-free dish, this recipe relies on a high-quality extra virgin olive oil to create a silky, indulgent texture without the need for cream. It serves as an excellent light lunch or an elegant starter for a multi-course dinner. For a balanced meal, enjoy a bowl alongside some toasted sourdough or simply garnish with a few extra basil leaves for a beautiful, homemade finish.
