Cucumber, Tomato, and Pineapple Salad with Asian Dressing

This vibrant cucumber, tomato and pineapple salad is a refreshing dairy-free dish that balances sweet, salty, and spicy notes perfectly. Inspired by the bright flavours of Southeast Asian cuisine, the combination of juicy pineapple and crisp cucumber offers a cooling contrast to the heat of the fresh chilli. It is a fantastic choice for a light summer lunch or as a zingy accompaniment to grilled meats and seafood.

Picked from the healthy salad category, this recipe relies on a simple yet punchy dressing made with lime juice, garlic, and a hint of fish sauce. The inclusion of fresh coriander and mint adds a fragrant, herbaceous lift that makes this homemade salad feel truly special. It is quick to assemble and naturally gluten-free, providing a nutritious way to brighten up any mealtime.
