This delicate egg drop soup with fresh spinach is a nutritious, dairy-free take on a classic takeaway favourite. By using reduced-sodium chicken stock and plenty of fresh vegetables, it provides a clean and savoury flavour profile that feels both light and restorative. The addition of earthy shiitake mushrooms and vibrant spring onions adds depth, while the baby spinach provides a boost of iron and vitamins, making it a wonderful choice for a swift lunch or a soothing starter.
Quick to prepare and naturally low in fat, this homemade soup is perfect for those seeking a healthy alternative to shop-bought options. The gentle technique of swirling egg whites into the hot broth creates elegant silken ribbons, offering a professional finish with minimal effort. Serve this comforting bowl alongside crisp brown rice crackers for a satisfying contrast in textures.

90g baby spinach, thinly sliced
3 spring onions, thinly sliced on the diagonal
110g shiitake mushrooms, stemmed, wiped clean, and thinly sliced
1 teaspoon reduced-sodium soy sauce
2 egg whites, lightly beaten
Asian sesame oil

How to make Egg Drop Soup with Fresh Spinach
In a medium saucepan over high heat, bring the chicken broth and 2 cups water to a simmer. Add the spinach, spring onions, mushrooms, and soy sauce; cook for 1 minute, stirring.
Very slowly pour the egg whites into the pot; immediately turn off the heat. Use a fork to stir the egg whites in a clockwise direction to make thin ribbons in the broth. Ladle into 2 bowls and garnish each with a drop of sesame oil. Serve with the crackers.
