This halibut ceviche with tomato and pineapple is a vibrant, dairy-free dish that brings a taste of the coast to your kitchen. The firm, white flesh of the halibut is gently cured in a zingy marinade of fresh lime juice and tequila blanco, complemented by the natural sweetness of ripe pineapple and juicy tomatoes. It is a sophisticated yet simple preparation that relies on the quality of its fresh ingredients to provide a burst of clean, bright flavours.
Perfect as a light starter or a healthy weekend lunch, this seafood dish is naturally low in fat and packed with fresh herbs. The addition of creamy avocado provides a beautiful contrast to the crisp radishes and subtle heat of the jalapeño. Serve it chilled on its own or with some lightly toasted corn tortillas for a satisfying, gluten-free meal.
