Homemade Mayonnaise

This classic homemade mayonnaise is a versatile kitchen staple that far surpasses shop-bought varieties in both texture and flavour. Using just a few larder essentials like egg yolks, Dijon mustard, and rapeseed oil, you can create a remarkably creamy and thick condiment. It is a brilliant dairy-free option for those looking to avoid processed additives, providing a fresh, bright lift to everything from summer potato salads to crusty artisan sandwiches.

Crafting your own mayonnaise serves as a fantastic foundation for various flavourings, such as a punchy garlic aioli or a herby tartare sauce. While this recipe uses fresh lemon juice and white wine vinegar for acidity, ensure you use high-quality eggs for the best results. It is a quick and rewarding project for any home cook, resulting in a rich, velvety sauce that stores beautifully in the fridge for a couple of days.
