Italian Salsa Verde

This vibrant Italian salsa verde is a versatile, dairy-free condiment that brings a punch of fresh flavour to any meal. Combining flat-leaf parsley with the salty depth of capers and anchovies, this herb sauce is sharpened with white wine vinegar for a bright, zesty finish. The addition of soaked bread creates a traditional, velvety texture that helps the sauce cling perfectly to your favourite ingredients.

Traditionally served with boiled meats, this homemade sauce is equally delicious drizzled over grilled fish, roast chicken or seasonal vegetables. It is a brilliant addition to a healthy Mediterranean-style diet and can be prepared a day in advance to let the flavours develop. Simply serve at room temperature to enjoy the full aromatic profile of the extra-virgin olive oil and fresh herbs.
