  • 2 medium onions, finely chopped

  • 80g thinly sliced spring onion

  • 2 garlic cloves, finely chopped

  • 1 teaspoon kosher salt

  • 900g medium or large prawns, peeled and deveined

  • 120 to 240ml water

Heat butter in a 12-inch heavy skillet over medium heat until foaming, then cook onions with spring onion, garlic, salt, and 1/4 teaspoons pepper, stirring occasionally, until softened but not browned, about 5 minutes.
