This aromatic onion and apple cider soup offers a delicious twist on a classic French favourite. By slowly caramelising the onions until they reach a deep, savoury sweetness, you create a rich base that perfectly complements the crisp acidity of the apple cider. The addition of fresh thyme provides an earthy undertone, making this a sophisticated yet simple dairy-free option for any midweek meal or weekend lunch.
Ideal for making ahead of time, this hearty soup actually improves in flavour if left to sit overnight in the fridge. It is a brilliant choice for those looking for a lighter, dairy-free starter that doesn't compromise on depth of flavour. Serve it piping hot in warmed bowls with a side of crusty sourdough bread for a truly comforting experience.

Ingredients for Onion Soup with Apple Cider
4 tablespoons unsalted butter
3 tablespoons olive oil
6 large onions (about 1.6kg), halved, thinly sliced
725ml low-salt chicken broth
600ml bottled apple cider
12 large thyme sprigs
Chopped fresh thyme
How to make Onion Soup with Apple Cider
Melt butter with oil in large pot over medium-high heat. Add onions; sauté until soft and dark brown, about 20 minutes. Add chicken broth, cider, and thyme sprigs. Bring to boil. Reduce heat; season with salt and pepper. Simmer soup, uncovered, 25 minutes. Discard thyme sprigs. (Soup can be made 1 day ahead. Cool slightly. Chill uncovered until cold, then cover and keep refrigerated. Rewarm over low heat before continuing.) Divide among 6 soup bowls, garnish with chopped thyme, and serve.
