Parsnip Soup with Corned Beef and Cabbage

This velvety parsnip soup with corned beef and cabbage offers a sophisticated way to enjoy classic, comforting flavours. The natural sweetness of the parsnips provides a smooth, earthy base that contrasts beautifully with the salty, savoury notes of the beef. By sautéing the cabbage until just wilted, you add a lovely textural element that elevates this dish from a simple vegetable soup to a satisfying, multi-layered meal.

Ideal for a weekend lunch or a seasonal starter, this dairy-free recipe is both nutritious and filling. The use of Savoy cabbage adds a vibrant colour and a boost of vitamins, while the corned beef provides a rich depth of flavour. Serve this soup steaming hot with a slice of crusty bread for a wholesome homemade dinner that feels truly indulgent.

Ingredients for Parsnip Soup with Corned Beef and Cabbage

  • 3 (1/8-inch-thick) slices cooked corned beef (110g), fat trimmed, chopped (45ml reserved, divided)

  • 2 Turkish bay leaves

  • 2 large parsnips (about 375g ), peeled, coarsely chopped

  • 325g chopped onions

  • 725ml (or more) low-salt chicken broth

  • 3 large savoy cabbage leaves, centre ribs removed

  • 60ml double cream

How to make Parsnip Soup with Corned Beef and Cabbage

Sauté 2 tablespoons corned beef fat and bay leaves in large saucepan over medium-high heat until fat renders, about 2 minutes. Stir in parsnips and onions. Add 725ml broth. Cover; simmer until parsnips are tender, about 10 minutes.

Meanwhile, cut cabbage and corned beef slices crosswise into very thin strips. Melt 1 tablespoon fat in medium skillet over medium-high heat. Add cabbage and corned beef. Sprinkle with salt and pepper. Toss until cabbage wilts, about 3 minutes.

Working in batches, puree soup with bay leaves and cream in blender until smooth. Return to same pan. Rewarm soup, thinning with more broth if too thick. Season with salt and pepper. Ladle into bowls. Mound corned beef and cabbage in centre.
