Potato Casserole

This elegant potato casserole is a wonderful addition to any dinner table, offering a lighter, dairy-free alternative to traditional creamy bakes. By using thinly sliced boiling potatoes and a savoury chicken broth, the dish achieves a beautiful balance between a tender, melt-in-the-mouth interior and a deeply golden, crisp top. The hint of melted butter provides a rich finish without the need for heavy cream, allowing the natural flavour of the potatoes to shine through.

As a versatile side dish, this recipe fits perfectly alongside a Sunday roast or a simple grilled protein. Because it relies on pantry staples and basic preparation techniques, it is an easy yet sophisticated option for those following a dairy-free diet. Serve it straight from the oven while the edges are still perfectly crunchy for the best texture and flavour profile.
