This aromatic red curry peanut sauce is a versatile staple for any dairy-free kitchen. Combining the bold, spicy notes of Thai red curry paste with the velvet texture of smooth peanut butter, this sauce offers a sophisticated balance of heat, salt and acidity. Fresh ginger, garlic and spring onions provide a fragrant base, while a splash of lime juice at the end ensures a bright, zesty finish that cuts through the richness of the coconut milk.
Ideal as a savoury dipping sauce for chicken skewers or a vibrant dressing for crunchy slaw, this homemade condiment is far superior to shop-bought versions. It can be prepared up to three days in advance, making it a stress-free addition to your weekend meal prep. Simply rewarm gently and finish with fresh coriander for a restaurant-quality accompaniment to your favourite Southeast Asian-inspired dishes.
