This elegant saffron-scented couscous is a vibrant side dish that brings a touch of Mediterranean warmth to the dinner table. Infused with the delicate, aromatic flavour of saffron and simmered in a rich savoury stock, the grains become beautifully fluffy and golden. It is a wonderful alternative to rice or potatoes, offering a sophisticated profile that pairs perfectly with roasted meats or grilled vegetables.
Prepared in under twenty minutes, this dairy-free recipe is as practical as it is delicious. The addition of toasted pine nuts provides a satisfying crunch, while the thinly sliced spring onions offer a fresh, sharp contrast to the buttery finish. Serve it alongside a slow-cooked lamb tagine or roasted harissa chicken for a complete and wholesome homemade meal that feels truly special.
