Spiced Carrots

These vibrant spiced carrots offer a fragrant twist on a classic side dish, bringing warmth and depth to your dinner table. By gently toasting aromatic ras-el-hanout and curry powder in oil before adding the vegetables, you unlock a complex savoury flavour that perfectly complements the natural sweetness of the carrots. It is a simple yet effective way to elevate a humble root vegetable into something truly special.

As a versatile dairy-free recipe, these carrots pair beautifully with roasted meats, grilled chicken, or even as part of a vegetarian mezze platter. The slow simmering process in savoury stock ensures every slice is tender and infused with spice, making it an excellent healthy choice for midweek meals or Sunday lunches alike. Serve them hot for the best flavour profile.
