Watermelon with Lime Dressing and Peanuts

This refreshing watermelon with lime dressing and peanuts is a sophisticated take on a summer classic. Combining the cooling sweetness of juice-heavy fruit with the savoury depth of Thai-inspired flavours, it offers a vibrant balance of salt, acid, and sugar. The addition of aromatic basil and a glug of extra-virgin olive oil transforms the simple fruit into a complex salad that is both hydrating and satisfying on a warm afternoon.

As a naturally dairy-free dish, this recipe is a versatile addition to any barbecue or outdoor lunch. The contrast between the soft, yielding watermelon and the crunch of dry-roasted peanuts provides an excellent texture that pairs beautifully with grilled fish or spicy chicken. It is a light, healthy option that proves fruit can be the star of a savoury table.
