This vibrant beef and shiitake mushroom stir-fry is a fantastic option for a nutritious midweek meal. Combining tender strips of sirloin steak with earthy mushrooms and crunchy snow peas, the dish is brought to life with a savoury blend of hoisin, ginger and Chinese five-spice. The use of sesame oil provides a rich, nutty aroma that perfectly complements the fresh spring onions and coriander, making it a feast for the senses.
As a diabetes-friendly recipe, this dish focuses on lean protein and fibre-rich vegetables while keeping preparation time to a minimum. It is an ideal choice for those seeking a balanced, lower-carbohydrate dinner that does not compromise on authentic Asian flavours. Serve it on its own for a light evening meal or alongside a small portion of brown rice for extra heartiness.

450g top sirloin steak, cut into 2-inch-long, 1/4-inch-thick slices
1 tablespoon Asian sesame oil
1 tablespoon minced peeled fresh ginger
350g fresh shiitake mushrooms, stemmed, thickly sliced
230g snow peas
1 bunch spring onions, sliced, divided
1 cup fresh coriander leaves, divided
5 tablespoons hoisin sauce
2 teaspoons chilli-garlic sauce
1/4 teaspoons Chinese five-spice powder
How to make Beef, Shiitake, and Snow Pea Stir-Fry
Sprinkle beef with salt and pepper. Heat oil in large nonstick skillet over medium-high heat. Add ginger and mushrooms; stir-fry until mushrooms are tender, about 3 minutes. Add beef to skillet; stir-fry until beef browns but is still pink in centre, about 1 minute. Add snow peas, half of spring onions, and half of coriander; stir-fry 1 minute. Stir in hoisin, chilli-garlic sauce, and five-spice powder; sauté until peas are crisp-tender, 1 to 2 minutes. Season with salt and pepper. Transfer to bowl. Sprinkle with remaining spring onions and coriander.
