Chicken and Coriander Bites

These chicken and coriander bites are a vibrant, protein-packed option for anyone seeking a lighter snack or a fresh dinner party appetiser. By using minced chicken thigh rather than breast meat, each bite remains succulents and tender, while the aromatic combination of fresh coriander and toasted sesame oil provides a sophisticated depth of flavour. The cornflour coating creates a delicate, golden crust that provides a satisfying contrast to the soft, savoury centre.

As a diabetes-friendly recipe, these bites are designed to be satisfying without being heavy, making them a brilliant choice for a nutritious midweek meal. Serve them hot from the frying pan alongside the sharp soy and rice vinegar dipping sauce to cut through the richness. They pair beautifully with a crisp cucumber salad or steamed greens for a complete, balanced lunch that feels both indulgent and wholesome.

Ingredients for Chicken and Coriander Bites

  • 60ml soy sauce

  • 60ml rice vinegar (not seasoned)

  • 450g chicken mince (not breast meat)

  • 1 large egg

  • 1/2 cup finely chopped fresh coriander

  • 2 spring onions, finely chopped

  • 2 teaspoons Asian sesame oil

  • 1 teaspoon salt

  • 180ml cornflour

  • 120ml vegetable oil

How to make Chicken and Coriander Bites

Stir together soy and vinegar in a bowl for dipping sauce.

Stir together chicken, egg, coriander, spring onions, sesame oil, and salt with a fork until just blended.

Spread cornflour in a shallow baking pan. With wet hands form chicken mixture into 1-inch balls, transferring them to baking pan as formed. Wash and dry your hands, then gently roll balls in cornflour until coated. (Balls will be soft.)

Heat 60ml vegetable oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook half of balls, turning over occasionally, until firm and golden (they will flatten slightly), 2 to 3 minutes. Transfer with a slotted spoon to paper towels to drain. Add remaining 60ml oil to skillet and cook remaining balls in same manner. Serve meatballs with dipping sauce.
