This grilled pancetta-wrapped asparagus is a sophisticated yet simple addition to any summer spread. By wrapping seasonal asparagus spears in delicate slices of salty pancetta, you create a beautiful contrast between the crisp, slightly charred vegetable and the savoury, golden meat. It is an ideal choice for outdoor dining and makes a wonderful light starter or a vibrant side dish for roasted meats.
As a diabetes-friendly option, this recipe focuses on high-quality fats and fibre-rich vegetables without the need for sugary marinades. Using skewers makes the spears much easier to turn on the grill, ensuring even cooking and consistent flavour. Serve these skewers immediately while the pancetta is crisp for a healthy, low-carbohydrate treat that everyone will enjoy.
