This grilled tandoori lamb is a vibrant and aromatic dish that brings together the bold flavours of toasted cumin, fennel and cardamom. By toasting whole spices before grinding them, you unlock a depth of flavour that beautifully complements the rich, savoury notes of the butterflied lamb. This method ensures the meat remains succulent and tender while developing a delicious, charred crust on the barbecue.
As a diabetes-friendly option, this recipe focuses on lean protein and heart-healthy olive oil rather than sugary marinades or heavy sauces. It is an excellent choice for a healthy weekend lunch or a summer dinner party, served alongside a crisp green salad or roasted seasonal vegetables. High in protein and packed with fresh ginger and garlic, it is as nourishing as it is satisfying.
