Herb-Roasted Chicken Breasts

These herb-roasted chicken breasts are a wonderful example of how simple, high-quality ingredients can create a sophisticated main course. Succulent and full of flavour, the chicken is infused with a fragrant blend of fresh rosemary, thyme, and garlic. Roasting the meat on the bone ensures it remains moist and tender, while a quick finish under the grill provides that desirable golden, crisp skin. The addition of dry white wine to the roasting tin creates a light, savoury jus that perfectly complements the earthy herbs.

As a diabetes-friendly dish, this recipe is naturally high in lean protein and low in carbohydrates, making it an excellent choice for a healthy mid-week dinner or a lighter Sunday roast. It pairs beautifully with a generous serving of steamed green vegetables or a crisp seasonal salad. Whether you are cooking for a family gathering or meal prepping for the week ahead, this versatile chicken dish is a reliable and nutritious addition to your recipe repertoire.
