This authentic Sicilian prawn dish, known as gamberoni alla casalinga, offers a beautiful balance of savoury and sweet notes. Large, juicy prawns are gently poached in a fragrant base of dry Marsala wine, plump tomatoes, salty capers and aromatic fennel seeds. It is a vibrant yet light meal that captures the essence of coastal Italian home cooking, highlighting fresh ingredients and simple techniques.
As a diabetes-friendly recipe, this dish focuses on lean protein and heart-healthy fats from extra-virgin olive oil. The inclusion of pine nuts and currants adds a sophisticated texture without the need for heavy sauces or added sugars. It works wonderfully as a light lunch or dinner, served alongside a crisp green salad or steamed seasonal vegetables for a complete, nutritious meal.

How to make Jumbo Prawns Marsala Housewife-Style (Gamberoni alla Casalinga Siciliana)
In a 10- to 12-inch sauté pan, heat the olive oil over medium-high heat until almost smoking. Add the onion and celery and cook until softened. Add the tomatoes, pine nuts, currants, capers, marsala, fennel seeds, red pepper flakes, and bay leaf and bring to a boil.
Remove the pan from heat and lay the prawns in one layer in the tomato mixture. Cover, set over low heat, and simmer for 4 minutes. Remove from the heat, season with salt and pepper to taste, and allow to stand for 5 minutes, covered.
Serve warm, or allow to cool to room temperature.
