This vibrant pan-roasted sizzling prawns dish is a wonderful showcase of fresh ingredients and bold spice. Combining succulent prawns with the gentle heat of Anaheim and jalapeño chillies, it offers a sophisticated balance of flavours without being overly spicy. The addition of crisp red peppers and onions provides a natural sweetness that complements the earthy notes of ground cumin, creating a colourful and aromatic meal that is as pleasing to the eye as it is to the palate.
As a diabetes-friendly recipe, this dish is naturally low in carbohydrates and rich in lean protein. It is an excellent choice for a quick midweek dinner, taking less than fifteen minutes to cook from start to finish. Serve the prawns over a bed of light, lime-scented rice for a fresh and healthy dinner that the whole family will enjoy.
