This elegant spring onion crusted arctic char offers a simple yet sophisticated way to enjoy sustainably sourced fish. Part of the salmon family, arctic char has a delicate, buttery texture that pairs beautifully with the sharp, savoury notes of grilled spring onions. Ingredients for Spring onion Crusted Artic Char
4 to 6 spring onions
1 tablespoon mayonnaise
2 (170g) pieces arctic char fillet
How to make Spring onion Crusted Artic Char
Preheat grill. Line rack of grill pan with foil.
Finely chop spring onions and stir together with mayonnaise. Pat fillets dry. Place fillets, skin sides down, on grill pan and season each fillet with a generous pinch of salt and pepper. Spread spring onion mixture evenly over tops of fillets.
Grill 3 to 4 inches from heat until spring onions are slightly charred and fish is just cooked through, about 8 minutes.
