This elegant Serrano ham salad with almond garlic sauce is a sophisticated choice for a light lunch or a refreshing starter. Combining the salty depth of cured Spanish ham with the mild sweetness of piquillo peppers, it offers a wonderful balance of Mediterranean flavours. The star of the dish is the creamy, velvet-textured dressing made from toasted almonds and garlic, which adds a satisfying richness to the crisp Romaine lettuce without the need for dairy.
As a diabetes-friendly recipe, this dish is naturally low in carbohydrates and high in heart-healthy monounsaturated fats from the nuts and olive oil. It is a nutritious option for those seeking a balanced, colourful meal that does not compromise on taste. Serve it as a stand-alone salad or as part of a tapas-style spread for a healthy, homemade feast.

How to make Serrano Ham Salad with Almond Garlic Sauce
Mince garlic and mash to a paste with salt using a heavy knife or a mortar and pestle. Transfer to a blender along with 120ml almonds, water, oil, vinegar, hot sauce, and black pepper, then blend until dressing is very smooth, about 1 minute. Coarsely chop remaining 2 tablespoons almonds.
Cut a lengthwise slit in peppers and discard any seeds, then cut peppers into 1/4-inch-wide strips.
Divide cos and peppers among 4 plates, then arrange ham on top. Drizzle each serving with some dressing and sprinkle with chopped almonds. Serve remaining dressing on the side.
