Prawns with Fennel, Dill, and Feta

This Mediterranean-inspired seafood dish brings together succulent prawns with the aromatic, aniseed notes of fresh fennel. By using the flavourful oil from a jar of sun-dried tomatoes to sauté the base, you infuse the entire pan with a rich, savoury depth that perfectly complements the sweetness of the shellfish. It is a vibrant, colourful meal that feels sophisticated yet requires very little preparation.

As a light and healthy dinner option, this recipe is ideal for those seeking a quick weeknight meal that does not skimp on taste. The addition of salty feta and fragrant dill provides a fresh finish, bridging the gap between a warm sauté and a bright summer salad. Serve it simply on its own, or with a side of crusty sourdough bread to soak up the herb-infused juices.
