Spice-Roasted Cornish Hens with Cucumber-Yoghurt Sauce

These spice-roasted Cornish hens offer a sophisticated twist on a classic roast chicken dinner. By split-roasting the birds, the skin becomes perfectly crisp while the meat remains juicy and succulent. The aromatic rub of toasted cumin and coriander seeds provides a warm, earthy depth that contrasts beautifully with the vibrant, herb-flecked dressing served on the side.

This poultry dish is an excellent choice for a weekend lunch or a light evening meal. The accompanying cucumber and yogurt sauce, blended with fresh coriander and garlic, adds a refreshing finish that keeps the meal feeling bright. Serve these hens with a simple seasonal salad or some roasted new potatoes for a complete, nutritious meal that feels truly special.
